Hi there question is when you deep fry crayfish I saw you ripped off the head then put it in the fryer do you eat through the tail shell when its done or pull the meat out?

Hi Jesse, to clean them we remove the “carapace” which disables the crayfish and then we remove the center tail flap carefully by wiggling it left and right as it’s gently pulled out which also pulls out the intestinal track. With smaller crayfish once we deep-fry them we eat them whole. With larger ones that have a harder shell we remove the tasty flesh.
