[nggallery id=484]We departed early in the morning to catch our flight from Amritsar to Delhi and just had two stops in Delhi filming at the Delhi Hyatt Regency and at the main fish market. The Hyatt Regency is one of the most prestigeous hotels in Delhi. Besides having great accommodations and services they have a wonderful restaurant known as the Aangan. As a special treat, the Head Chef, Anil Khurana was filmed preparing some excellent Sol fish and chicken in the clay oven.
Our last filming location was the famous KC Market, well known for it’s fresh fish and also for using a very special technique to clean, scale, fillet and steak fish. Knives are not hand-held here, but instead, a large, very sharp blade is anchored stationary to a table and a person pushes the fish against the blade to get the desired results. I am sure this technique takes getting used to so that the person clening the fish does not get hurt. They have incredible skill to scale, fillet and cut precise stakes using this technique!
